Our olive oil is characterised in particular by its low bitterness and the slight pungency of its aftertaste, which is at the same time very fruity and balanced. This is deliberately not a varietal oil, but a very special extra virgin olive oil, obtained from more than 8 different varieties of olives, including several autochthonous cultivars (varieties that are only found in this area) of Abruzzo and the Chieti region. These include the following varieties: Crognalegna, Cucca, Gentile di Chieti, Intosso, Leccino, Nebbia and others
The very special blend of the different varieties of olives with their different degrees of ripeness at harvest time and the gentle methods of cold pressing and cold extraction of the olive oil, give our Extravergine its unique taste.
Our olive groves have been family-owned for generations and until the end of the 90s were harvested and used only for our own needs. This means that only a fraction of the trees were needed and harvested for our own production, which meant that even today there are still olive varieties in our fields that are hard to find elsewhere because they were never very productive. Among them are, for example, very old varieties that produce only very small fruits and ripen very late in the year. Still others have to be harvested at the beginning of October, otherwise they will fall from the tree by themselves from mid-October.
Since we appreciate our olive oil very much ourselves and it is of course also on our own daily menu, we have not and will not use any chemicals to protect our trees. As a matter of principle we do not do this – even if it means that every few years a harvest may fail. We accept this for the quality of our product.
